Sausage Bite & Caprese Skewers with Balsamic Drizzle

Let the holiday vibes fill your kitchen! Our sausage bite skewers are a merry medley of Italian sausage, mozzarella balls, baby tomatoes, fresh basil and zesty balsamic glaze. And the best part? These little bites are a super easy, festive and delish - a perfect app for the busy season!

Sausage Bite & Caprese Skewers with Balsamic Drizzle

Serves: 6-8

Recommended wine pairings: 2019 Vineyard Series Stoneridge or 2020 The Don



INGREDIENTS:

  • 1 lb Italian sausage links, mild or spicy

  • 1 pkg fresh mozzarella bite size balls (we used Ciliegine)

  • 1 pkg baby tomatoes

  • Fresh basil leaves

  • Balsamic glaze - can purchase a glaze (we like Trader Joe’s) or reduce balsamic vinegar down to a glaze consistency (we love Costco’s Kirkland Signature Organic Balsamic Vinegar of Modena)

  • Flaky salt, if desired, to sprinkle on mozzarella (highly recommended!)


ALSO NEEDED:

Small skewers or cocktail picks - a little longer than a toothpick (such as these for a casual gathering or these for a festive party)



INSTRUCTIONS:

  1. Preheat oven to 425°. Line sheet pan with parchment paper. Cut sausage into small bite size pieces. Shape them into roundish balls and place on pan. Roast until internal temperature is 160° or until browned to your liking - about 25-30 min. Remove and let cool slightly.

  2. Assemble the skewers - we started with tomato, then basil, mozzarella and ended with sausage.

  3. Place on serving tray and drizzle with balsamic glaze. Sprinkle flaky sea salt on mozzarella if desired.

  4. Enjoy with a glass of 2019 Vineyard Series Stoneridge or 2020 The Don!
