Zesty Buffalo Chicken Lettuce Cups

Here’s a fresh and fun app to serve at your next party – Super Bowl perhaps? These Buffalo Chicken Lettuce Cups are simple, light, and so satisfying. Perfect for a game day snack that won’t weigh you down.
We recommend pairing with our 2021 Riesling Grand Klasse or 2024 Rosé!






Buffalo Chicken Lettuce Cups

INGREDIENTS:
- 8 bibb lettuce leaves, washed and individually removed
- 1 lb chicken tenders, thinly sliced, then diced
- 2-3 Tbsp of your favorite buffalo hot sauce, or to taste (we like Cholula Wing Sauce Caliente)
- 3 Tbsp butter, divided
- ½ tsp garlic salt
- 2 celery stalks
- 2 medium carrots
- 2-3 green onions
- Ranch dressing, homemade or store bought (we love Uncle Dan’s Classic Ranch dressing packet that you mix with buttermilk and mayo)
- Garnish: Crumbled blue cheese and/or dill



DIRECTIONS:
- Slice celery and carrots (we used a mandolin to slice), then roughly chopped them. Finely chop green onions. Set aside.
- In a frying pan on medium heat, sauté diced chicken in 1½ Tbsp butter. Cook for about 4 min then flip over. Season with garlic salt and cook through to an internal temp of 160°. Pour buffalo sauce over chicken, add remaining 1½ Tbsp butter and stir to evenly coat chicken. Turn off heat.
- Assemble cups by placing a leaf of lettuce on a plate or platter and top with chicken, celery, carrots, dressing, green onions and a garnish or two.
- Serve and enjoy with a chilled glass of Riesling or Rosé!
Pro tip: If making homemade ranch dressing, it’s ideal to make it in the morning or even the night before so the flavors can meld.
