Watermelon and Arugula Salad with Manchego and Smokehouse Almonds paired with 2024 Rosé of Syrah

We’re holding on to the end of summer with both hands - and a glass of Rosé! This salad is everything we love: juicy watermelon, peppery arugula, smoky almonds, and salty Manchego, all tied together with a tangy balsamic-garlic dressing. It’s easy to throw together, endlessly snackable, and even better with a chilled glass of our 2024 Rosé of Syrah (or Franc Blanc)!
Grab a bottle, whip up the salad, and toast to the last golden days of summer…


Watermelon and Arugula Salad with Manchego and Smokehouse Almonds
Serves: 4

Suggested wine pairing: 2024 Rosé & 2024 Franc Blanc
INGREDIENTS:
~½ personal watermelon, cut into ½-inch cubes
A couple handfuls of arugula
~1 cup blueberries
½ cup Smokehouse almonds, chopped medium-fine
Shaved Manchego cheese
¼ cup balsamic vinegar (we love Kirkland Organic Balsamic Vinegar of Modena - well-balanced and perfect for dressings)
¼ cup extra virgin olive oil
1–2 cloves garlic, pressed or finely minced
¼ tsp sea salt
Black pepper to taste
Finely diced chives (optional)joy!
INSTRUCTIONS:
Wash the watermelon and cut it in half. Remove the rind and cut into ½-inch cubes. Set aside in a large bowl.
Chop the almonds and rinse the blueberries.
Make the dressing in a small jar by combining the balsamic vinegar, garlic, and salt. Stir to combine, then whisk in the olive oil or shake the jar until emulsified. Taste and adjust seasoning if needed.
In a shallow bowl or platter, layer the arugula, blueberries, and almonds. Lightly drizzle with dressing (you can add more later if needed).
Top with shaved Manchego and chives (if using). Toss gently.
Serve with a beautiful glass of chilled Rosé and enjoy!
